{"id":1152,"date":"2019-11-11T12:40:06","date_gmt":"2019-11-11T11:40:06","guid":{"rendered":"https:\/\/gers160.fr\/?p=1152"},"modified":"2021-04-21T10:47:28","modified_gmt":"2021-04-21T08:47:28","slug":"aspic-a-lache-des-marais-et-potimarron","status":"publish","type":"post","link":"https:\/\/gers160.fr\/?p=1152","title":{"rendered":"Aspic \u00e0 l&rsquo;ache des marais et potimarron"},"content":{"rendered":"\n<p>Aspic \u00e0 l\u2019<strong>ache des marais<\/strong>, <strong>potimarron<\/strong>, <strong>nigelle<\/strong> (appel\u00e9e \u00ab\u00a0cheveux de V\u00e9nus\u00a0\u00bb, r\u00e9colte du jardin ou achet\u00e9 au rayon condiment  bio) et champignon noir (appel\u00e9 \u00ab\u00a0\u00ab&nbsp;oreille de Juda\u00bb s\u00e9ch\u00e9, utilis\u00e9 dans la cuisine asiatique)&nbsp;<\/p>\n\n\n\n<p>L\u2019aspic est un plat froid comprenant divers ingr\u00e9dients pris dans de la gel\u00e9e fabriqu\u00e9 \u00e0 partir d\u2019un bouillon de viande.<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1 cuill\u00e8re \u00e0 caf\u00e9 bomb\u00e9e d\u2019Argar Agar bio<\/li><li>50 cl de bouillon de poule (fait maison ou cube) ou de boeuf<\/li><li>Une poign\u00e9e de graines de nigelles <\/li><li>10 Champignons noirs \u00ab&nbsp;oreilles de Juda\u00bb s\u00e9ch\u00e9s<\/li><li>Sel et poivre<\/li><\/ul>\n\n\n\n<p>Pr\u00e9parez les ingr\u00e9dients pour mettre au fond d\u2019une dizaine de petites verrines ou de petits moules individuels. Graissez pr\u00e9alablement le fond pour faciliter&nbsp; le d\u00e9moulage.&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>d\u00e9couper les potimarrons en forme de frites \u00e0 l\u2019aide d\u2019une mandoline. Faire cuire ces b\u00e2tonnets doucement \u00e0 la vapeur en veillant \u00e0 ce qu\u2019ils restent entiers et fermes pour pouvoir les manipuler. Salez et poivrez.<\/li><li>Laver abondamment vos petites branches tendres d\u2019ache des marais ( 5 ou 6 petites feuilles attach\u00e9es \u00e0 leur tige) et placez les dans un r\u00e9cipient bien \u00e9goutt\u00e9s.&nbsp;<\/li><li>Apr\u00e8s avoir laiss\u00e9 tremper les champignons pendant plusieurs heures (minium 3) \u00e9gouttez-les entiers. S\u2019ils sont trop gros,&nbsp; coupez-les grossi\u00e8rement en morceaux. Faites les cuire avec un filet d\u2019huile d\u2019olive. Salez, ajoutez un peu de beurre \u00e0 la fin de la cuisson.&nbsp;<\/li><\/ul>\n\n\n\n<p>D\u00e9posez et disposez au fond de chaque verrine ou petit moule d\u2019abord l\u2019ache des marais, ensuite les b\u00e2tonnets de potimarron, 4 \u00e0 5 graines de nigelles, puis un champignon entier ou \u00e9minc\u00e9. Veillez aussi \u00e0 l\u2019esth\u00e9tique de votre composition en arrangeant les \u00e9l\u00e9ments ce sorte qu\u2019ils apparaissent de leur c\u00f4t\u00e9 le plus favorable une fois empil\u00e9s et d\u00e9moul\u00e9s. Mettez par exemple le brin d\u2019ache des marais bien au milieu, dessous, \u00e0 plat. Enroulez les b\u00e2tonnets de potimarron sur eux-m\u00eames afin qu\u2019ils \u00e9pousent les bords du petit moule, d\u00e9posez le champignon noir en lui laissant sa pour la gel\u00e9e.&nbsp;<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>Faire chauffer le bouillon de poule ou de boeuf.&nbsp;<\/li><li>A froid, dans un petit r\u00e9cipient,&nbsp; et apr\u00e8s avoir pr\u00e9lev\u00e9 un peu de bouillon ti\u00e8de, incorporer une cuill\u00e8re \u00e0 caf\u00e9 bomb\u00e9e d\u2019Agar Agar puis le m\u00e9langer au bouillon.&nbsp;<\/li><li>Faire chauffer jusqu\u2019\u00e0 \u00e9bullition en prenant soin de bien remuer tout le temps. Cette pr\u00e9paration ne doit pas bouillir longtemps.&nbsp;<\/li><li>Sans trop tarder, recouvrez de bouillon votre composition dispos\u00e9e au fond des moules. Les plantes, l\u00e9gumes, graines et champignons vont rapidement prendre dans la gel\u00e9e.&nbsp;<\/li><li>Mettez les aspics dans leurs moules au frigo et d\u00e9moulez-les sur une assiette froide.
