Cuites, elles \u00e9paississent les potages et font d\u2019excellentes tartes sucr\u00e9es ou sal\u00e9es. On peut \u00e9galement en faire des beignets.&nbsp;<br>Les fruits (fromageons) se consomment crues en salade ou comme des c\u00e2pres et ont le go\u00fbt de la noisette.<br>Sa grande racine se consomme cuite en bouillon. Elle peut remplacer le blanc d\u2019\u0153uf comme liant.<br>Les p\u00e9tales de fleurs se consomment crues en salade ou en dessert.
